HOW TO MAKE PUFF-PUFF
Puff-puff is a traditional African snack. It is sold in roadside shops in many African countries like Nigeria, Ghana, Cameroon, and many others.
Puff-puff is one of the most popular snacks in Sub-Saharan Africa, especially in West Africa. So many West African countries have different names given to them.
Some of us could not do without puff-puff when we much younger and trust me, many still can’t do without even now that they are grown. Why? It’s because puff-puff is one of the best.
Puff-puff is one of the simplest snacks to make. The ingredient is not much, the procedure is not stressful.
What is Puff-puff made of?
Puff-puff is made of dough containing flour, yeast, sugar (and some ingredient I will mention later as we move on), and deep fry in vegetable oil to golden brown colour.

- Nigerians call it Puff-puff
- Sierra Leoneans calls it Puff-puff
- Ghanaians call it Buffloaf (Bofrot)
- Ivoirians calls it Bofloto
- Cameroonians calls it Beignet/Puff-puff (French/English)
- Congolese calls it Mikate
- Sudanese calls it Ligemat
- Liberians call it Kala
MATERIALS NEEDED IN MAKING PUFF-PUFF
- Deep fryer/ frying pan
- Scale (to measure your ingredient)
- Puff-puff maker
INGREDIENTS IN MAKING PUFF-PUFF
- Flour 500g
- Yeast 2tspn
- Sugar 150g
- Nutmeg 2tspn
- Salt ½tspn
Warm water: Please note that it is warm water and not hot water. if you use hot water, it will kill your yeast and will prevent your puff-puff from rising but warm water will speed up the rising process. Remember if the water is warm, it speeds up the process but if the water is hot, it kills the process.
Onions (1 medium-sized): To be soaked in frying oil to bring out the taste of the puff-puff
Vegetable oil (enough vegetable oil for frying, 1 to 2 bottles of vegetable oil depending on the pan you are using and the amount of puff-puff you are about to make)
HOW TO MAKE PUFF-PUFF
Here are the steps to making puff puff:
STEP 1: WASH YOUR MATERIALS
To maintain good kitchen hygiene, wash your material with soap and clean running water, and dry them with a clean kitchen towel.
STEP 2: WASH YOUR HANDS
To maintain good personal hygiene, wash your hands with soap and clean running water and dry them with a clean kitchen towel.
STEP 3: SIFT YOUR FLOUR
Sift/sieve your flour using a sieve into a big bowl to remove any particle that may be in the flour.
STEP 4: ADD SUGAR
Add 150g of sugar into the bowl containing the flour
STEP 5: ADD SALT
Add ½tspn (or a pinch) of salt into the mixture
STEP 6: ADD NUTMEG
Add 2tspn of nutmeg into the mixture
STEP 7: ADD YEAST
Add 2tspn of yeast into the mixture and mix very well
STEP 8: ADD WARM WATER
Add warm water bit by bit till you get a dropping texture. Mix the mixture very well with your clean palm
STEP 9: ALLOW TO FERMENT
Allow to rise or double in size (ferment) for 1 hour
STEP 10: HEAT YOUR OIL
Turn on your cooker (moderate heat) and put the amount of oil that will fry your puff-puff. Remember that puff-puff needs enough oil so put enough oil to fry your puff-puff
STEP 11: PUT YOUR ONION
Cut your onion into halves and put one half into the hot oil to extract the onion flavor and leave in the oil.
STEP 12: FRY YOUR PUFF-PUFF
Using a puff-puff maker drop the mixture into the oil but if you are not using a puff-puff maker, drop the mixture in ball shape into the oil either with a spoon or clean hand. Fry till you get a golden brown colour.
STEP 13: SERVE YOUR DELICIOUS PUFF-PUFF
Serve your delicious puff-puff warm with an ice-cold watermelon juice
