HOW TO MAKE SPECIAL PUFF-PUFF
Puff-puff is recognized in so many parts of West Africa. In Nigeria, puff-puff is a very popular snack loved by both young and old.
Puff-puff is one of the easiest snacks you can make. It doesn’t consume energy and it isn’t complicated.
But did you know you can make your puff-puff in a special way? Surprised?
Special puff-puff is not exactly the same as your regular puff-puff.

WHAT MAKES IT SPECIAL?
Like I said earlier, special puff-puff is not the regular puff-puff sold by the roadside. It is a puff-puff made in a special way and has two special ingredients that make it special.
These special ingredients add different feeling, look, and taste to the puff-puff. They also add to the nutritional value of the puff-puff.
The two special ingredients are FISH and RED BELL PEPPER (TATASHE). Yes, fish and red bell pepper are the two ingredients that make it special and have very high nutritional values.
The following are the nutritional value of a special puff puff:
Fish is very high in protein, vitamin D, omega-3 fatty acids (omega-3 fatty acids are important for your body and brain), and so many other nutritional values.
RED BELL PEPPER
Red bell pepper (in Lagos we call it tatashe) is very high in vitamins A, C, and B-6. It also contains protein, iron, and others. Guess you didn’t know the tatashe you buy every other day is high in nutrients.
MATERIALS NEEDED IN MAKING SPECIAL PUFF-PUFF
- Puff-puff maker
- Deep fryer/frying pan
- Hand grater
RECIPE FOR MAKING SPECIAL PUFF-PUFF
- 500g Flour
- 150g Sugar (or according to your taste More or less)
- ½ tsp. Salt
- Vegetable oil (enough quantity to fry the fish and puff-puff)
- 2 tsp. Yeast (instant yeast)
- 2 tsp. Nutmeg
- 1 big onion
- Seasoning cube
- Red bell pepper: Tatashe as we call it Lagos, NigeriaFish: You can use any iced fish of your choice. Fillet your fish (to fillet a means to thoroughly remove all bones from the fish)
HOW TO MAKE SPECIAL PUFF-PUFF
These are the steps to making your special puff puff:
STEP 1: MISE EN PLACE
Mise en place is a French culinary phrase which means “putting in place” or “everything in place”.
Mise en place is the preparation of dishes and ingredients before the beginning of service (in a professional kitchen).
In plain English, mise en place means making sure all your ingredients (like your salt, pepper, seasoning cube, and so on) are set beside you and ready for use.
This is to prevent you from walking about (which can also cause a kitchen accident) in the kitchen and not concentrating on your cooking.
STEP 2: WASH YOUR MATERIALS
To maintain good kitchen hygiene, wash all materials to be used (washable materials) with soap and clean running water and dry with a clean kitchen towel.
STEP 3: WASH YOUR HANDS
To maintain good personal hygiene, wash your hands with soap and clean running water and dry with a clean kitchen towel.
STEP 4: SIEVE YOUR FLOUR
Sieve/sift your flour into a clean bowl using a sieve. This is to make sure your flour does not contain dirt.
STEP 5: ADD SUGAR
Add the quantity of sugar you wish to use.
STEP 6: ADD SALT
Add a pinch of salt.
STEP 7: ADD YEAST
Add instant yeast into the mixture.
STEP 8: ADD NUTMEG
Add nutmeg and mix very well.
STEP 9: ADD WATER
Add water little by little till you get a dripping texture. Work on the mixture very well with your palm
STEP 10: ALLOW TO FERMENT
Allow to double in size for about 1 hour. While you wait for the puff-puff mixture to rise, prepare your fish and red bell pepper.
STEP 11: BOIL YOUR FILLET FISH
Please make sure your fish has been filleted (all bones removed) before boiling it. Season your fillet fish and boil till it cooked.
STEP 12: MASH YOUR FISH
Marsh/ pound your fish. You can use a small mortar and pestle to pound the fish or you could use a spoon to mash it.
STEP 13: FRY THE MASHED/POUNDED FILLET FISH
Using little oil, heat the oil, add onion paste (grated onion), add seasoning cube and allow to simmer for 3 minutes. Fry the mashed fillet fish till it is well dried.
STEP 14: PUT DRIED FILLET FISH IN A STRAINER
When the mashed fillet fish is dried, put in strainer and allow it to cool.
STEP 15: ADD FILLET FISH TO THE MIXTURE
When your fillet fish becomes cool, sprinkle it into the puff-puff mixture. Don’t mix together because at this point the puff-puff is still rising.
STEP 16: CHOP YOUR RED BELL PEPPER
Using a knife and chopping board, chop little red bell pepper into very tiny pieces. Sprinkle the chopped pepper into the mixture. Don’t mix.
STEP 17: HEAT YOUR OIL
Pour the quantity of oil to fry the puff-puff and heat the oil using medium heat.
STEP 18: FRY YOUR PUFF-PUFF MIXTURE
Fry your puff-puff using a puff-puff maker but if you don’t have one, use a scoop or your clean hands to make a ball shape with the mixture and drop into the hot oil one after the other. But make sure every ball you scoop has fish and pepper in it.
STEP 19: SERVE YOUR SPECIAL PUFF-PUFF WARM
Serve your special puff-puff warm, with a cold ice drink.
