HOW TO PREPARE NIGERIAN FRIED RICE WITH CHICKEN


Fried rice is a popular food in Nigeria. It is mostly prepared in restaurants, in parties, and sometimes in the home.
It contains lots of vegetables which makes it very nutritious.
To prepare perfect fried rice you need to take your time, and make sure all ingredients are in their right quantity.
FRIED RICE according to the name means rice that is Fried. But the question is “is it possible to fry rice?” because I know many people even you reading this dont fry your rice. Yes, it is very possible, and I am going to teach you that. But this is not the only method in preparing Nigerian fried rice but you can say this is the standard method approved by we the chefs. DID YOU KNOW? When you use frying method to prepare your fried rice it wont get spoilt easily.

MATERIALS NEEDED TO PREPARE FRIED RICE AND CHICKEN

INGREDIENTS/RECIPE NEEDED TO PREPARE FRIED RICE AND CHICKEN
 LONG GRAIN RICE
 CHICKEN
 CURRY
 THYME
 WHITE PEPPER
 SCENT PEPPER
 SEASONING CUBE
 GINGER
 GARLIC
 ONION
 FRIED RICE SPICES
 CARROT
 PIMENTO (green pepper)
 RED PEPPER
 SPRING ONION
 GREEN PEAS
 KIDNEY OR LIVER
 SWEET CORN
 SALT
 VEGETABLE OIL

PREPARATION OF THE CHICKEN
HOW TO COOK AND FRY CHICKEN
STEP 1: WASH YOUR MATERIALS
To maintain good kitchen hygiene, wash all your materials (washable materials) with soap and clean running water and dry with a clean kitchen towel.
STEP 2: WASH YOUR HANDS
To maintain good personal hygiene, wash your hand with soap and clean running water and dry with a clean kitchen towel.
STEP 3: GRATE YOUR ONION, GINGER AND GARLIC
Using a grater, grate your onion, ginger and garlic into a bowl. Usually for a full chicken, i use 2 big onions, 1 big ginger and 2 curbs of garlic. So, you can use any amount that suites you.
STEP 4: WASH YOUR CHICKEN
Remove excess fat from the chicken (if any) then wash your chicken very well with clean water. I wash my chicken about 4 to 5 times.
STEP 5: PUT YOUR CHICKEN INTO A POT
After washing your chicken very well, put it in a very clean pot
PLEASE NOTE THAT STEP 6 IS THE MOST IMPORTANT PART AND NEEDS FULL ATTENTION
STEP 6: SEASON YOUR CHICKEN
Seasoning your chicken needs full attention so that you can get the seasoning right. Your chicken should have gone inside the pot before you start seasoning and make sure the pot doesn’t have water in it. Please don’t cook the chicken yet (do not put it on fire yet)
i. Add your seasoning cube
ii. Add your scent pepper
iii. Add your thyme (optional or very little)
iv. Add your curry
v. Add the grated onions, ginger and garlic
After adding these ingredients, use your hand (clean hand) to massage the ingredient into the chicken. Massage for about 2 minutes until you notice the ingredient has covered all the chicken in the pot
STEP 7: COOK YOUR CHICKEN
Using medium heat put your pot on the fire and cook your chicken but don’t add water. Cook for 10 minutes and turn the chicken around the pot and cook for another 7- 10 minutes then add water and cook for 10 minutes.
We didn’t add water within the first 20 minutes because we want the chicken to absolve the ingredient and we added water later to make our chicken stock (chicken water) for our fried rice.
STEP 8: FRY YOUR CHICKEN
When your chicken is tender, remove it from the fire and place a dip fryer or frying pan on the fire and pour enough oil into the pan
Use a little lower heat than you used in cooking the chicken to fry it. When the oil get hot, fry your chicken till it gets a golden brown colour (not burnt) and place in a strainer to make it free from excess oil.
YOUR CHICKEN IS READY
BONUS STEP: GARNISH YOUR CHICKEN
This step is optional. You can garnish your chicken by frying little pepper with spring onion and carrot. Add the fried chicken into the fried pepper and mix very well.

HOW TO PREPARE FRIED RICE VEGETABLES
STEP 1: WASH YOUR VEGETABLES
Wash all vegetables which includes: carrot, green pea, onion, pimento, red pepper, spring onion.
STEP 2: RINSE YOUR SWEET CORN
If you are using a canned sweet corn, rinse out the chemical used in preserving it with a strainer and set aside. We are not frying this because it is industrial.
STEP 3: CUBE YOUR VEGETABLES
Using your clean chopping board and knife, cube the carrot, onion, pimento, red pepper and spring onion into small pieces. Please after cubing each vegetable put each vegetable in different bowl I.e. carrot should be in a bowl, spring onion in its own bowl, pimento in its own bowl and so on.
STEP 4: CUBE YOUR LIVER/KIDNEY:
Cube your liver/kidney into small pieces
STEP 5: FRY YOUR VEGETABLES
Fry your vegetables but not together. Fry each vegetable differently and put in a strainer. Fry your green pea if you are not using the industrial one but if you are using the industrial, use the sweet corn method on it.
We fried the vegetables differently because some vegetables are stronger than others and will take more time to get soft while frying. So if we fried them together the softer ones will get burnt before the stronger ones get cooked
STEP 6: FRY THE LIVER/KIDNEY
Fry your liver or kidney till it becomes tender

PREPARATION OF THE FRIED RICE
HOW TO COOK FRIED RICE
STEP 1: MISE EN PLACE
Mise en place is a French culinary phrase which means “putting in place” or “everything in place”.
Mise en place is the preparation of dishes and ingredients before the beginning of service (in a professional kitchen).
In plain English, mise en place means making sure all your ingredients (like your salt, pepper, seasoning cube, and so on) are set beside you and ready for use. This is to prevent you from walking about (which can also cause kitchen accident) in the kitchen and not concentrating on your cooking.
So, put your ingredients in place before you start cooking.
STEP 2: WASH YOUR RICE
Use hot water to sock your rice for about 1 minute to remove excess starch from the rice (you are doing this because you are not going to parboil the rice). After 1 minute, wash the hot water away with a strainer then wash the rice with running water for about 3 to 4 times.
After washing, pour the rice in a strainer and leave for about 5 minutes so that the water can drain out completely.
STEP 3: POUR GROUNDNUT OIL
Pour little oil to fry the rice into your pot (big pot). Heat the oil using low heat.
Measurements: A DERICA OF RICE IS EQUAL TO 1KG OF RICE. For every “derica of rice” use quarter bottle of oil i.e. 1 derica of rice use quarter bottle (¼ bottle) of oil, for 2 derica of rice use half bottle of oil (½ bottle) and so on.
STEP 4 NEEDS CAREFUL ATTENTION AND MULTI TASKING
STEP 4: FRY YOUR RICE
Pour the rice into the oil. Keep stairing/tunning the rice for 3 minutes. The moment you stop stairing, the rice will begin to stick to the buttom of the pot and burn. So stair for 3 minutes
After staring for 3 minutes, add your curry, seasoning cube, little thyme, salt, pepper, fried rice spices into the rice and keep stairing for 2 minutes
STEP 5: POUR YOUR CHICKEN STOCK
After mixing your spices with the rice for 2 minutes, pour your chicken stock into the rice. Mix the rice with the stock. If your stock is not enough to cook the rice (which is normal), add little quantity of water to cook the rice. NOTE: Your fried rice should not be too soft or too strong when it is cooked.
PLEASE NOTE: If you are not sure of the quantity of water to put, put little water and keep checking on the rice. When you notice the water is not enough to cook the rice very well, add little water.
STEP 6: YOUR RICE IS COOKED
When your rice is well cooked, turn off your cooker and remove the pot from the cooker.
STEP 7: ADD YOUR VEGETABLES:
When your fried rice is not on the cooker anymore, sprinkle the vegetables (including your sweet corn) on the rice and use your wooden spoon to mix the rice and vegetables very well.
STEP 8: SERVE YOUR DELICIOUS FRIED RICE
Serve you beautiful, delicious and yummy fried rice with chicken with an ice cold drink.
